When cooking means creating, it's more enjoyable to me. Sure, I consider trying new recipes as enjoyable too or I wouldn't be here, doing this. However, most of these recipes come from creating which means attempting to put measurements into what I'm doing, which is usually 'a little of this, a glop of that, a dollop of this, a splash of that, a pinch of this, mix until the consistency is as it should be, and so forth. Quite often I'll look and see what we have in the pantry and refrigerator, and an idea of what to make will come from there. That's how these Lemon Blueberry Ricotta Muffins came to be. Using a lemon cake mix (gasp!), I decided to make something besides cake. Not only did I make muffins, but I also made Lemon Blueberry Ricotta Pancakes by altering the mix just a bit to get a thinner consistency. Both passed the test, the taste test, of course!
Lemon Blueberry Ricotta Muffins
Ingredients:
Lemon cake mix
1 cup water
1 egg
1/2 cup Greek yogurt
1/4 cup ricotta cheese
1 cup blue berries
Directions:
Preheat oven to 350°
Mix all ingredients until smooth.
Pour into greased muffin pan.
Bake at 350° for 25 minutes.
Let cool for 5 minutes before carefully removing.
Plate and enjoy!
