One glance at an overly ripe banana and two thoughts come to mind: Smoothie or banana bread? Sure, there are other options for using bananas, but those are the top two yummy options around here.


Banana bread is so versatile, having plenty of recipes to choose from. Per usual, I normally don't go by a recipe, but for the sake of sharing, I have been attempting to jot down what I do as I go. One creative cooking frenzy led to something I have named Banana Harvest Bread. With add-ins being optional based on preferences, I am still sharing what I used for everyone else who loves harvest flavors, although it certainly can be enjoyed any time of the year!

Banana Harvest Bread


Ingredients

  • 1 ½ cups all-purpose flour

  • ½ tsp baking soda

  • ¼ tsp salt

  • 1 tbsp ground cinnamon

  • 2 tbsp nutmeg

  • 1 cup brown sugar

  • 3 bananas, mashed

  • 1/4 cup pumpkin puree

  • 2 tbsp sour cream or Greek yogurt

  • ½ cup butter, softened

  • 2 large eggs

  • ⅓ cup buttermilk

  • 2 tbsp pure maple syrup

  • 1 tsp vanilla extract

  • 1 finely diced apple

  • ¼ cup craisins

  • ¼ cup zucchini

  • ¼ cup carrots

  • ¼ cup pecans or walnuts

  • semi-sweet chocolate chips (as desired)


Directions

1.   Preheat the oven to 350 degrees F (175 degrees C). Lightly grease an 8x4-inch loaf pan.

2.   Combine creamed brown sugar and butter, bananas, pumpkin, sour cream or Greek yogurt, and eggs in a large mixing bowl. Add in flour, buttermilk, vanilla, maple, cinnamon, nutmeg baking soda, and salt; beat well.

3.   Fold in apples, craisins, zucchini, carrots, chocolate chips and nuts (lightly coat nuts in flour to prevent sinking).

4.   Pour batter into the prepared pan.

5.   Bake in the preheated oven until a toothpick inserted into the center of the loaf comes out clean, about 60 minutes.
