Do you ever make too much oatmeal and then wonder what to do with it? Sure, it's fine to reheat, adding a bit of liquid and enjoying again. However, don't you want to create something new using your leftover cooked oats? Of course you do! Cookies? You could. But why not stay with the breakfast theme this time and make muffins? Yummy, brown sugar, maple muffins!
One morning while sipping on freshly brewed coffee, I found myself in creative mode while gazing at a bowl of cold, leftover oatmeal, and quickly began reaching for ingredients. This is what I came up with! Join me in this delicious endeavor!
Next Day Oat Muffins
Ingredients:
1 cup cooked oatmeal (I had made homemade maple, brown sugar)
1 egg
1 TBSP melted butter or coconut oil
1/2 cup milk
4 TBSP pure maple syrup
1 tsp vanilla
1.5 cups all-purpose flour (whole wheat or our preferred choice)
2 TBS baking powder
1 TBS cinnamon (or sweet / warm spice or blend of your choice)
1/4 cup brown sugar
1/2 cup of your 'extra somethings' - Small apple chunks, raisins or craisins, dark chocolate chips and/or chopped pecans or walnuts. (This is YOUR creation!)
What to Do:
Preheat oven to 400°F
Mix wet ingredients - cooked oatmeal, butter / coconut oil, egg, milk, vanilla, maple syrup
Add dry ingredients - flour, baking powder, cinnamon, brown sugar - mix until blended
Fold in your 'extra somethings' - apples, raisins / craisins, dark chocolate chips, nuts
Fill muffin tins, almost but not quite full
Place in a preheated oven, bake for 17 - 20 minutes (I took mine out at 17 and they were done.)
Slice however you wish, spread with butter or cream cheese, drizzle with a bit of maple syrup and enjoy! Scrumptious!
