Cottage Cheese Salad

This cottage cheese salad is a timeless dish, and really easy. I learned about it as a young girl from my Nanny (grandmother) and Mom. I've enjoyed it in the summer, especially. However, it's enjoyable any time of the year! I've put together a recipe to share, but honestly, no recipe needed. I just dice cucumber and tomatoes (whatever I have on hand), gently stir them into the cottage cheese, and dress with a few splashes of white vinegar, then add salt (just a pinch as there is already sodium in other ingredients) and pepper or any other seasoning as preferred. Easy and healthy.


Sometimes we enjoy this with lettuce, beside a salad or in a lettuce wrap. Other times, we just eat it as is.


Cottage Cheese Salad


Ingredients

  • 1 (16 ounce) container cottage cheese, drained or it will be too watery

  • 4 roma (plum) tomatoes, chopped (or any tomato)

  • 4 green onions, chopped (optional)

  • 2 medium cucumbers, peeled and diced

  • a splash of white vinegar (not too much - again, you don't want it watery)

  • salt and pepper, to taste


Directions

  1. In a medium bowl, stir together cottage cheese, tomatoes, green onions, and cucumbers. Season with a splash of vinegar, salt and pepper to taste. Chill until serving.
