As a young girl I thoroughly enjoyed working in the kitchen with my grandmother, lovingly known as Nanny Pete, and my dear mom; both are extremely talented women. Learning to make homemade biscuits and a great deal of other foods without using recipes carried over to my creative nature as a whole. One of the best desserts she ever taught me to make actually using a recipe was also one of the easiest to remember, and that's none other than the Lazy Day Fruit Cobbler. I've made this cobbler using fresh blueberries or various canned fruits, and one of my favorites... fresh, ripe, juicy peaches!
We were recently blessed by our awesome neighbor and friend, Ms. Liz, with fresh peaches from North Carolina! After eating on these delicious gems for several days, we decided to use the rest by making this timeless cobbler!
This cobbler can be baked in any of your favorite dishes, but I certainly prefer using a cast iron skillet. There's just something about melting the butter (real butter ... no fake butter allowed) just to the point of being brown butter and then pouring the batter into the melted deliciousness, creating a perfect crust that makes this my baking vessel of choice.
Ingredients
1 cup Self Rising Flour (Alternatives such as almond flour can be used.)
1 cup Sugar (Substitutes to refined sugar such as Sugar in the Raw, Stevia, etc. work just fine. You can even reduce the amount if using a sweet fruit with lots of natural juice such as fresh peaches.)
1 1/2 tsp of cinnamon
1 cup Milk (Alternatives work per dietary needs.)
3 cups Freshly Sliced Ripe Peaches
Directions
Pre-heat oven to 375⁰
Melt 1/2 stick of real butter in a cast iron skillet.
Sprinkle 1/4 cup of sugar over freshly sliced peaches. Set aside.
Mix flour, remaining sugar and cinnamon, then mix in milk (while the oven is preheating and the butter is melting in the skillet).
Remove the skillet from the oven once the butter is fully melted ... do not burn the butter!
Using a spatula, gently pour the batter directly on top of the melted butter (do not mix).
Spread the peaches on top of the batter (again, do not mix).
Drizzle remaining juice from the fruit on top of the fruit. (Tip - drizzling cream all over the top of the peaches makes the cobbler extra creamy. Again, do not mix!)
Bake for 45 - 55 minutes. (Honestly, I just check it and take it out when it's sightly brown and the middle is no longer runny.)
(Tip - Wrap foil around the edges to prevent the edges getting too dark while the center finishes baking.)
This cobbler is scrumptious served warm, topped with a sweet, cold scoop of vanilla ice cream. Mmmmmm......
