Decadent Dark Chocolate Bread Pudding

What could fill your home with the irresistible aroma of a chocolate factory better than this rich, decadent, dark chocolate bread pudding?


In an earlier post, I shared a Quick Vanilla Bread Pudding that I tend to make using leftover biscuits (if there are any) but I often turn to satisfying a chocolate craving by making this decadent chocolate version!

Decadent Dark Chocolate Bread Pudding


Ingredients


  • 4 cups of cubed day (or two) old bread (biscuits, French, or brioche, or work best)

  • 2 cups milk (whole or mixed w/ cream is best but 2% still works)

  • 1/2 cup granulated sugar (or equivalent amount of preferred substitute - I usually just drizzle a little maple or honey instead of using white sugar)

  • large egg

  • 2 egg yolks

  • 1 teaspoon vanilla extract

  • 4 oz (1/2 cup) dark chocolate chips

  • 1 tbs dark chocolate unsweetened cocoa

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon salt

  • 2 tablespoons melted butter



Instructions


  1. Preheat the oven to 350°F (175°C) and grease a 9x9-inch or similar baking dish. (Melt butter just in the bottom right before placing bread cubes in the pan.)

  2. Place bread cubes (or biscuit chunks) in a baking dish. Arrange evenly.

  3. Place a saucepan over medium heat.

  4. Add milk and cream. Bring to a simmer. Stir in dark chocolate cocoa until smooth.

  5. Take pan off heat. Add chocolate chips and let set for 5-10 minutes. Stir until the chocolate chips are melted. Set aside.

  6. In a mixing bowl, mix sugar, salt, cinnamon, eggs, vanilla, and melted butter (cooled to room temp)

  7. Slowly add chocolate mixture to the egg mixture. Mix well.

  8. Slowly pour prepared chocolate custard over the biscuits. Make sure the biscuits are all coated - but do not stir.

  9. Place in the oven and bake for 30-35 minutes, or until the pudding is just set. Do not overbake. The center should remain slightly soft and custardy. (If it's jiggly, it's just right!)

  10. Enjoy warm with a scoop of ice cream.

    - Leftovers can be stored in the refrigerator, but leftovers are rare!
