Pineapple Mandarin Orange Fluff


What is versatile enough to serve at any meal or in any season, from Christmas to summer picnics?  A dish that explodes with flavor and texture; sweet, tart, nutty, smooth, fluffy, and crunchy all in each exciting bite?! Pineapple Mandarin Orange Fluff, that’s what!


This is indeed a dish that can be as diverse as you’d like it to be, but this version is one I made for a Thanksgiving gathering that hit the mark as a favorite. From the youngest guest to the oldest, they were coming back for more and requesting the recipe. What's funny is that it was also one of the quickest and easiest dishes to make!



Since I am notorious for creating on the fly, I had to guestimate some of the measurements.  I don’t know how “tossing a bit of this" and "throwing in some of that” will go over in a 'recipe’. So, giving my best guess, I put together a real recipe.  😉 


Tip 1: If you need to alter this for dietary purposes or preferences, it is as easy as choosing sugar free and low-fat ingredients.


Tip 2: Another perfect addition in this dish is coconut flakes, for those of us who like coconut.

Now, let’s get on with mixing deliciousness in a bowl!


Pineapple Mandarin Orange Fluff


Ingredients:

  • 1 ½ cans of drained mandarin oranges (15 oz cans)

  • 1 can of crushed pineapple, not drained (8 oz)

  • ¼ cup of sliced cherries (maraschino works well)

  • 1 small box vanilla pudding (8 oz)

  • 1 small container vanilla yogurt (6 oz)

  • 1 container of cool whip, thawed (8 oz)

  • ¼ cup mini marshmallows

  • ¼ cup crushed pecans or walnuts


Directions:

  1. Drain mandarin oranges. Place mandarin oranges, crushed pineapple, and cherries in a medium sized bowl.

  2. Sprinkle the instant vanilla over the top.

  3. Mix together until combined using a spatula.

  4. Soon in the cool whip, mix together until well combined. (Takes about a minute.)

  5. Using a spatula, fold in remaining ingredients: mini marshmallows and nuts.

  6. Garnish with cherries and a few pieces of nuts.

  7. Cover and place in refrigerator to chill for at least an hour before serving.

  8. Enjoy!
